With Thanksgiving just around the corner, I wanted to share a recipe that brings a taste of the islands to your holiday table. This Hawaiian Sweet Potato Casserole combines the rich flavors of local sweet potatoes with a hint of coconut and macadamia nuts, offering a delightful twist on a classic dish.
Ingredients:
4 large Hawaiian sweet potatoes
1/2 cup coconut milk
1/4 cup brown sugar
1/4 cup melted butter
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup chopped macadamia nuts
1/2 cup shredded coconut
Instructions:
Preheat oven to 350°F (175°C).
Boil sweet potatoes until tender, then peel and mash them in a large bowl.
Stir in coconut milk, brown sugar, melted butter, cinnamon, and nutmeg until well combined.
Spread the mixture into a greased baking dish.
Sprinkle chopped macadamia nuts and shredded coconut evenly over the top.
Bake for 25-30 minutes, until the topping is golden brown.
